Miranda's Super Bowl Chilli (also perfect for a footy grand final!)
Serves 20 (no leftovers!)
INGREDIENTS
1.8kg Beef Mince (85% Lean)1.8kg Hot Pork Italian Sausage
0.9kg Sweet Pork Italian Sausage
5 onions
3 x 400g cans whole tomatoes
3 cans black beans
2 cans red beans
1 can Pinto/Borlotti beans or chick peas
3 tbs chilli powder
3 tbs cumin powder
1 tbs cajun seasoning
1 tsp cayenne powder
2 tbs dark chocolate
2 tbs maple syrup
pinch cinnamon
1 - 2 x 355ml bottles stout beer
salt to taste
METHOD

Brown all meat

Add onions and saute together until onions have softened

Add cumin and chilli powder and mix
- Add all canned goods
- After 1 hour of simmering add additional seasonings
- After 2 hours add beer
- Stir every 30 minutes and focus on the bottom of the pan where the chilli can over cook
- Adjust seasonings
- Cook for at least 5 hours
Note: Vegetarian chilli is very similar. Add additional beans and tomatoes. Be careful of sweet flavours as they stand out more in the veggies version.
