I had an amazing butcher when I was in the UK and have not managed to find anyone close in over 18 years of being in Australia, but by Jove I think we may have now. When I opened the pack I was really worried as no fat. I'm like oh no it's going to taste bland as I'm a great believer in fat equals flavour.
So I'm thinking what's the true test, so I went with basic. I cut it into steaks, salt pepper and rest correctly. That's hubbies job he cooks a steak perfect every time.
Once it was done I gingerly cut into it and it was like cutting into butter. As for the taste, wow it was like going back to two decades. Steak that tastes like steak. Thank you there is a *** out there. Now to test the rest of my order.
