The navel end brisket is the belly side of the brisket. The navel end is larger and more evenly shaped than the point end. There is more fat on the NE brisket than a PE brisket. It has a layer of fat on one side. Navel ends are ideal for classic oven-baked brisket, slow cooker brisket with onions and smoked brisket (it slices beautifully once cut).
This cut of beef is ideal for smoking, making pastrami, curing or making home made bacon.
