Not only does a butterflied leg cook relatively quickly, it marinates well and has the benefit of picking up char from the grill. Spread your favourite dry rub or marinade all over and place onto a rack on a baking tray, cover bottom of the tray with water. Cover with foil. Preheat the oven to 160C and cover your baking tray with foil. Roast it for 2-3 hours. Remove foil at the last 20-30 mins.
