Why start with a Soffritto?
Soffritto is a fundamental flavor base in Mediterranean cooking. Sautéed, finely chopped onions, carrots, and celery. Used as a foundation for ragu, soups, sauces, stews.

METHOD
Soffritto Ingredients
- 2 celery sticks
- 2 carrots
- 1 onion
Ingredients
- 85vl mince
- Passata Sauce (readymade works well)
- Bay Leaf
- Thyme
- Salt Pepper
Method
Soffritto - Dice vegetables and sauté in olive oil until onion is transparent (not brown). This will take approximately 7-10 minutes.
Add mince and cook through.
Add passata, bay leaf, thyme and salt and pepper to taste.
Simmer for minimum of 20 minutes.
The longer you simmer the richer the sauce and more depth of flavour!
