Ingredients
- 1 pack of Mexican pulled beef
1 can of organic black beans
Shredded lettuce
Red cabbage, shredded + tossed in ACV
For the salsa;
- 1/4 corn, kernels grilled on a pan
- 1/4 cucumber, diced
- 1/4 red capsicum, diced
- 1/4 spring onion
- lime juice
- salt
For the guacamole;
- 1 ripe avocado
- Juice of 1 lime
- 1/4 red onion, diced
- black pepper
- salt
Topping:
- Nutritional yeast
- Spoonful of Goodness Cortido

Method
- Mash up the avocado, and mix in the guacamole ingredients and set aside
- Grill corn kernels and set aside
- Reheat or cook pulled beef as per cooking instructions
