Chinese Pork Stir Fry with Ginger Rice
INGREDIENTS
- 500g Dirty Clean Food Pork Stir Fry Strips
- 2 carrots, peeled and sliced into thin strips
- 1 zucchini, peeled and sliced into strips
- 1 red capsicum, sliced into strips
- 1 lemon, cut into wedges
- 2 tsp ginger paste
- 2 tbsp butter
- 1 tsp Chinese five spice

2 tsp fish sauce
- 4 tbsp oyster sauce
- 2 tbsp soy sauce
- 2 tsp brown sugar
- 1 1/3 cup basmati rice
- 2 1/2 cups water
METHOD
In a saucepan melt butter and a dash of olive oil. Cook the ginger at medium heat, until fragrant. Then add rice and water plus a pinch of salt and bring to boil
Reduce heat to low and cover. Cook for 10 minutes then remove from heat and keep covered until rice is tender and water absorbed.
Combine soy sauce, brown sugar, a good squeeze of lemon, fish sauce and Chinese five spice blend. Add pork stir fry strips to coat.
Heat a drizzle of olive oil in a frying pan over a high heat and add pork. Stir fry until brown and transfer to a bowl.
Add carrot, zucchini and capsicum and stir fry for 4-5 minutes until softened. Return pork to the pan and add oyster sauce and heat through for 2 minutes.
