Make the most of this delightful and vibrant summer fruit and make this plum sorbet with only 3 ingredients. The perfect way to utilise ripened fruit.
Make it Your Own
All plums are good plums, especially if they're sourced from local growers. You can use any plums that you prefer, or even a mix of seasonal varieties.
We've gone for a super easy version that includes the plum skin- this gives the sorbet a stunning colour and a little bit more texture. If you're after a super smooth texture, blanch your plums and remove the skins, or peel them and exclude from your mix.
You can also up the ante with some lime or lemon juice, basil or other aromatics to elevate this recipe. The key ingredient is salt- it balances the sour and bitterness of the plum. You can serve this sorbet with flaky salt on top for that extra kick.

Ingredients
Makes approximately 1.8 litres of sorbet
1.5kg of ripened plums, seeds removed and quartered
1 cup of sugar, dissolved in 1 cup of warm water, cooled down
½ tsp salt

Method
- Using a blender, blend the plums, sugar syrup and salt well until smooth and no large lumps are present
- Place the mixture to cool in the fridge, overnight if possible.
- Churn using an ice cream maker for 30 minutes until smooth. If you don't have an ice cream maker, you can freeze the mixture and then blend it. Place in an airtight container and freeze immediately.
- Serve with flaky salt on top.
